Sweet Fire Chicken Recipe
- Mix together, then marinate for 20-30 minutes:
- 1 pound boneless skinless chicken breast cut into 3/4 to 1" pieces
- 1 Tbsp. light soy sauce
- 1/4 tsp. salt
- 1/4 tsp. white pepper
- 1 egg
- Create coating for the chicken by mixing the following:
- 3/4 cup cornstarch
- 1/4 cup flour
- 1/4 tsp salt
- 1/4 tsp white pepper
- Coat chicken pieces thoroughly.
- Heat vegetable oil to 350 degrees Farenheit.
- Fry chicken in batches, 3-4 minutes or until golden brown and crispy.
- Place on paper towel to drain.
- Prepare vegetables:
- 1 cup diced onions
- 1 cup diced red bell pepper
- 3 cloves minced garlic

- Prepare the Sauce:
- 3/4 cup thai sweet chili sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. light soy sauce
- 1 tsp. sambal chili sauce
- In wok or pan on medium high heat add oil to coat bottom and sides.
- Add diced onions and red bell peppers. Cook and stir for 2 minutes.
- Add minced garlic. Cook and stir for 1 minute.
- Add pineapple. Cook and stir for 2-3 minutes or until onions and peppers slightly soften.
- Add cooked chicken and sauce into pan. Toss until completely coated with sauce.
- Garnish with green onions and serve.
