Sweet Fire Chicken Recipe
  1. Mix together, then marinate for 20-30 minutes:
  • 1 pound boneless skinless chicken breast cut into 3/4 to 1" pieces
  • 1 Tbsp. light soy sauce
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 1 egg
  1. Create coating for the chicken by mixing the following:
  • 3/4 cup cornstarch
  • 1/4 cup flour
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  1. Coat chicken pieces thoroughly.
  2. Heat vegetable oil to 350 degrees Farenheit.
  3. Fry chicken in batches, 3-4 minutes or until golden brown and crispy.
  4. Place on paper towel to drain.
  5. Prepare vegetables:
  • 1 cup diced onions
  • 1 cup diced red bell pepper
  • 3 cloves minced garlic
  • oil
  1. Prepare the Sauce:
  • 3/4 cup thai sweet chili sauce
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. light soy sauce
  • 1 tsp. sambal chili sauce
  1. In wok or pan on medium high heat add oil to coat bottom and sides.
  2. Add diced onions and red bell peppers. Cook and stir for 2 minutes.
  3. Add minced garlic. Cook and stir for 1 minute.
  4. Add pineapple. Cook and stir for 2-3 minutes or until onions and peppers slightly soften.
  5. Add cooked chicken and sauce into pan. Toss until completely coated with sauce.
  6. Garnish with green onions and serve.
